~Gearing Up For Valentine’s Day~

Yes, I know Valentine’s is a few weeks away, but it’s never too early to plan! I love Valentine’s Day. When my daughter was young I used to dress her in pink and red…now she’s older and protests…why do they have to grow up?!?!

 I’ve already ordered my hubbies gift. I’m so excited…I think he’s going to love it. It’s custom so I wanted to make sure it arrived on time.  Last year we, my daughter and some of my friends, made sexy cookies.

This year I’m not sure what we are making, however I found these healthful Sweetheart Salads that would make a great first course to any romantic Valentine’s dinner.

My week just flew by…I have no idea where it went! I hope everyone has a fantastic weekend!

French designer Izak Zenou’s illustrations are so whimsy and amazing.

I’m addicted to Slap Ya Mama! It’s Cajun Seasoning and I put it on everything! My brother discovered it when he lived in Louisiana about 10 years ago and introduced me to it. I order it by the case.

I’m so ready for spring so I can turn our old shoes into planters. How cute are these!

My daughter is dreaming…actually begging, for a canopy bed. I was open to the notion… I remember how cute and frilly the canopy beds were when I was young. Well, I might have opened a huge can of worms…I didn’t realize how elaborate and amazing canopy beds had evolved. Heck, I want one...

~ Cold “Zucchini Pasta” Salad~

How cool is this gadget? It’s made by Spirelli de Gefu instruments and it turns veggies into pasta. I like how small it is and it can easily be stored in drawer.

This is a great recipe for the summer when the garden is producing a ton of zucchini and tomatoes and you have no idea what to do with them.

 Cold  “Zucchini Pasta” Salad

2 large zucchinis

2 large tomatoes

1 clove garlic, minced or crushed

1/2 cup kalamata olives halved

2 tablespoons capers

3 Peperoncini peppers chopped

1-2 teaspoons Italian herbs mix

10 fresh basil leaves, ribbon-sliced or torn

½ cup extra-virgin olive oil, or to taste

Salt & Pepper to taste

Chile flakes (optional)

1/2 Cup chopped Cashews (for topping)

Spiralize zucchinis, or if you do not own this kitchen tool, use a potato peeler and make long flat fettuccini-type noodles.

Put tomatoes, garlic, olives, herbs, capers, peperoncini peppers, olive oil, basil, salt and pepper in a large bowl. Add zucchini toss until well combined. Refrigerate for 15 minutes before serving.

Right before you serve sprinkle with cashews.
